Overview
Cardiovascular Disease and Dietary Fiber—Clinical Outcomes and Interventions that Don’t Rely on Consumers to Change their Food Choices
Dietary fiber intake is recognized as reducing cardiovascular disease risk by esteemed scientific bodies globally, yet intake levels across all age groups consistently fall short of recommendations– highlighting the need for innovative strategies. This program provides health professionals and Coalition for Grain Fiber (CGF) scientists and advisors with a deeper understanding of the emerging role of fiber in cardiovascular disease progression and impact on quality of life; the evolution of the impact of dietary fiber as cardiovascular disease clinically intensifies; and particular subgroups that are more likely to benefit from fiber interventions. These topics will be discussed in light of and with reference to novel intervention strategies to increase dietary fiber content in staple foods. Following the presentation (which is the CEU portion), a panel discussion and Q&A will explore approaches to engage policy in the novel interventions discussed, especially related to public health funding.
Learning Objectives (CPEU)
Under review for 1 CPEU credit. Upon completing this activity, the learner will be able to:
- Describe the impact of dietary fiber on cardiovascular disease prevention
- Summarize current evidence on the emerging role of fiber in cardiovascular disease clinical outcomes
- Identify current dietary fiber recommendations related to cardiovascular health
- Identify practical and novel strategies for increasing dietary fiber intake to meet goals, and options to engage dietary fiber in cardiovascular disease -related policy conversations.

Agenda
Following a brief introduction of innovative strategies to enhance staple foods at population scale in peoples’ current diets, the virtual seminar will consist of two parts:
- Part 1- 50 minutes, comprised of an outline of the discussion of cardiovascular disease as it relates to fiber by the panelists, and a Q&A session
- Part 2- 25 minutes, facilitated discussion and question session about policy engagement for dietary fiber-focused initiatives, inviting panelists to share their perspectives.

Associate Professor of Medicine, Chief, Division of Cardiovascular Medicine, Heart & Vascular, at the University of Nebraska Medical Center.

Dr. Corrine Hanson, PhD, RD, LMNT, FAND (panelist)
Professor of nutrition and the director of the Medical Nutrition Program at the University of Nebraska Medical Center. She is a Fellow of the Academy of Nutrition and Dietetics and was named a UNMC Distinguished Scientist in 2019. Dr. Hanson is dedicated to understanding the effects of nutrition on the promotion of health and the development and progression of disease over the life course.

Dr. Rod Wallace, PhD (presenter)
Business strategist and economist. A Fulbright fellow, Wallace earned his PhD in Economics from the University of Michigan. As the President of the Foundation for Innovation in Healthy Food, Rod leads a coalition of scientists, business professionals, and other stakeholders dedicated to transforming the food industry by prioritizing the role of nutrition in health.

Dr. Dariush Mozaffarian (panelist)
Cardiologist, public health scientist, and Director of the Food is Medicine Institute at Tufts University. He is also Distinguished Professor, Dean Emeritus, and Jean Mayer Professor at the Friedman School of Nutrition Science and Policy; Professor of Medicine at Tufts School of Medicine; and attending physician in the Division of Cardiology at Tufts Medical Center. Dr. Mozaffarian’s overall goal is to create the science and translation for a food system that is nutritious, equitable, and sustainable.
Intended Audience
- This activity is designed for two complementary audiences: cross-disciplinary participating researchers in the Coalition for Grain Fiber, and nurses, physicians, registered dietitians, and public health professionals. Also healthcare and policy professionals engaged in cardiovascular disease prevention, CVD prevention and management, nutrition science, or population-health interventions.
- Content for this activity will be based on peer-reviewed scientific literature, clinical evidence, and consensus reports relevant to dietary fiber, CVD disease prevention and management.
